Vegetarian Baked Zucchini Balls

Vegetarian baked zucchini balls have a unique flavor that causes an explosion of tastes. Simple to prepare, they can be served at any time of the day with a fresh Greek yogurt sauce and fresh mint. Overall, vegetarian baked zucchini balls are super nutritious, an easy snack, and super delicious. They can be prepared very easily with different tastes every time. All you have to do is add or change the combination of spices and you will always get other flavors to enjoy.

Vegetarian baked zucchini balls seem perfect for a delicious dinner with family and friends. Of course, they are also welcome for breakfast or even taken with you on a relaxing picnic.

Vegetarian Baked Zucchini Balls

Ingredients

3 zucchinis
2 medium onions and 2 medium potatoes
1 carrot and 1 egg
150 g goat cheese
5 cloves of garlic
2 tablespoons of breadcrumbs
1/2 bunch of parsley and 1/2 bunch of dill
1/2 teaspoon sweet paprika and 1/2 teaspoon oregano

Serve with Greek yogurt with finely chopped dill or mint




Method

  1. Wash the zucchinis well and then peel them.
  2. Grate zucchinis on a large mesh grater, sprinkle a little salt on them, and let them drain in a colander for 15-20 minutes. During this time start to prepare the composition.
  3. Clean the onions, potatoes, and carrots and grate them on a fine-mesh grater. On top of these add the cheese grated on a large mesh grater, the egg, the pressed or finely chop garlic, the dill, the parsley, the breadcrumbs, the sweet paprika, and the oregano.. feel free to use whatever spices you want. Always prepare this recipe using a different blend of spices, and create and enjoy unique flavors.
  4. Try to drain the pumpkin as best you can. Squeeze it with your hands as hard as you can to remove the remaining water.
  5. Add the drained pumpkin over the composition created earlier and mix all the ingredients well. If you still have excess water that you cannot drain, add a few more breadcrumbs.
  6. Preheat the oven to 360°F degrees.
  7. Put a baking sheet in the oven tray and with your palms, form around 30 round balls that you need to put in the tray.
  8. Baked them for 40 minutes at 360°F degrees.

You can serve them with a Greek yogurt sauce with dill or mint.

This recipe is super easy and gives you the freedom to choose your favorite flavor or try as many flavors as you can.

Yes, this is the perfect recipe to travel around the world with. Therefore, below I present to you some famous spice mixes with which you can start creating aromatic zucchini balls:

Provence herbs blend: rosemary, thyme, and oregano. Lavender, basil, and marjoram are also found in several de Provence herb blends from American or European markets.
Italian spice mix: basil, oregano, rosemary, marjoram, parsley, and thyme. Basil is a sensational spice, I use it a lot, both as a spice and fresh.
Greek spice mix: oregano, dill, garlic powder, onion powder, basil, black pepper, and salt.
Indian spices mix: coriander, Curcuma / turmeric, black pepper, thyme, cinnamon, and ginger.

And the list goes on and on. There are so many unique spice blends, flavors, and tastes that it’s important to feel free to create some delicious zucchini balls.

My advice is to start with the spices that you know the taste of and that you are used to and gradually add other spices that you use less. That’s what I try to do, every time I cook, because spices are healthy and, after all, they add flavor to the food.




Why do I love to serve these Vegetarian Baked Zucchini Balls with Mint Yogurt Dip?

Well, this combination makes me think of Greece. Yes, Greek cuisine is at the top of my preferences and I want to learn to cook as many dishes as possible from this famous cuisine. From salads to desserts, everything is sensational. Greek food is simple, light, flavorful, and elegant. They delight us with smooth, crunchy, and fresh textures. It awakens our senses with the mix of spices and the freshness of simple vegetables that are balanced and flavored.

It is incredible that while each Greek recipe gives us freshness it also gives us a time travel through the history of Greece.

But why is Greek cuisine so aromatic and delicious?

Well, Greece is full of small local businesses, most of which do not want to produce on a large scale. And through this method, they preserve their traditions of preparing products as naturally as possible. They emphasize quality ingredients, as ecologically as possible. And when the food is created with quality ingredients, everything is perfect.

The climate of Greece is favorable for growing olives and lemons. Two of the most important ingredients in their kitchen. It is also the kitchen that uses (in my opinion) the most vegetables, either fresh or cooked, in the preparation of famous traditional recipes.

I want to share with you the best Greek recipes that I love:

  • the famous tzatziki sauce – it’s super easy to make, delicious, and authentically Greek.
  • portokalopita – my favorite dessert. It’s a traditional Greek dessert with a strong orange flavor that I serve with a scoop of vanilla ice cream. A culinary delight especially on hot summer evenings.
  • saganaki shrimp – I love to cook them because they are prepared very quickly and the taste is indescribable.
