Vegetable Soup

This multivitamin vegetable soup feeds my soul. It is very aromatic, simple, and quick to prepare. I always choose small to medium-sized fresh vegetables, it may be a sign that they were grown as naturally as possible and not giant vegetables that are grown with who knows what.

Vegetable soup is always the perfect choice in any season. I love to cook this soup when the weather is colder and rainier, but I have found that this vegetable soup is also perfect in the summer. Indeed it delights my soul and I feel that I am nourishing myself with health.

Vegetable Soup

Ingredients

2 medium onions
1 red pepper and 1 yellow bell pepper
1 zucchini
1 parsnip
1/2 medium celery
1 carrot and 1 potato
1 bunch of parsley
8 tablespoons of tomato sauce
1/2 teaspoon each of black pepper and coriander
50 ml of oil and 2.5 liters of water
salt to taste




Method

  1. Wash, peel, and cut all the vegetables.
  2. In a large pot, add the oil and finely chopped onion. Cook the onion on low heat for 10 minutes, and stir from time to time. It is important to add the oil and onion to the pan at the same time, the onion should cook slowly, and the flavor will come out of it. It should not be put in the already hot oil, as it burns and even if it does not burn, the taste that it eliminates during this thermal shock is bitter and all the nutrients disappear.
  3. After the onion was cooked, add the finely chopped vegetables to the pot, namely: the red and yellow peppers, the zucchini, the parsnip, the celery, the carrot, and the potato. Mix well with slow movements and put a lid on the pot. Cook them on low heat for another 5 minutes.
  4. Then add the water and put the lid on the pot.
  5. Boil all the vegetables on high heat for 20 minutes.
  6. Add the tomato sauce. You can taste it and add extra tomato sauce if you feel. Depending on the type of sauce chosen, commercial or homemade, the intensity of the taste differs.
  7. Cook on high heat for another 10 minutes.
  8. Then add the finely chopped parsley, pepper, coriander, and a pinch of salt and turn off the heat.
  9. Put the lid on the pot and let the soup rest for about 15 minutes before enjoying its delicious taste.

How do we store and preserve vegetable soup?

Well, soups and stews are the best dishes to save time and enjoy a delicious and healthy meal every day. It’s the dish I prepare on Sunday evenings, and so I enjoy a super nutritious and tasty soup for a week.

Vegetable soup can be kept in the refrigerator for up to 6 days and in the freezer for up to a month. I haven’t tried one yet to keep in the freezer, it seems a bit strange to me but never know.

It is recommended that after it cools down, the vegetable soup should be transferred to a container that closes tightly and is kept in the refrigerator. Most of the time it seems to me that the soup tastes better after two or three days, I have no idea what’s going on but I’m sure it happened to you too.

About vegetable soup… in general:

Vegetable soup is prepared all over the world. Every civilization uses local ingredients to create something special. That’s what I like most about this kind of dish, that you can be inventive, you can test new tastes given by different vegetables and spices.

Vegetable soup seems to me to be the dish where you can use your creativity and curiosity, or even prepare only with the vegetables you have available in the fridge without wasting time at the market. It’s so easy and simple to make, all you have to do is use as many types of vegetables as you can, a little of each, your favorite spices, and fresh herbs that give the final flavor.

Sometimes I like to sour it with a cup of sour cabbage juice or the juice of half a lemon right 10 minutes after turning off the heat. A delicacy! I didn’t know that soups and dishes can be soured with lemon juice, but lately, I’ve been reading about Mediterranean cuisine and they use lemon juice a lot in cooking.

To give another sensational taste you can add a small spicy red pepper or half of it depending on your preferences. I also like it a lot and feel the need sometimes to eat spicy food and a spicy soup fills you with this need :))




Other delicacies that are easy to prepare and are super healthy and nutritious:

Lately, I’ve started to appreciate cream soups quite a bit. I say this because the last few years for me have been years of improving the quality of food. Until after college, I only ate meat. I couldn’t imagine eating anything else. I didn’t like vegetables, I ate the soups strained… unfortunately I had a bad diet. But I’m happy and every day I think about what a radical change I’ve made, how many goodies I’ve tasted, and how many wonderful recipes I’ve prepared.

That’s how I discovered some great recipes for cream soups. For me, they are the best cream soups ever eaten and I sincerely hope you try the recipes and tell me what you think:

  • creamy lentil soup – yes! it’s at the top of my preferences because I haven’t found a better taste anywhere I’ve tried. The secret is that the vegetables are baked in the oven and give an indescribable flavor to the soup. I have a lot of positive feedback on this soup and I am very glad that I could share this sensational recipe.
  • broccoli cream soup with goat cheese – this is my pride. Broccoli is very healthy and I couldn’t find a delicious dish to include in my diet. That is until I tasted this cream soup that blew me away. There is no way you can feel a better taste in a dish where the star is broccoli.
  • creamy mushroom soup – this was a pleasant surprise. I couldn’t imagine a cream of mushroom soup tasting good. I just don’t associate mushrooms with cream soup. But now it is part of these top 3 best cream soups that I have ever prepared and enjoy.
