Vegan Cabbage Rolls

Let’s prepare together some special, delicious, and very healthy, namely vegan cabbage rolls cooked in a clay pot. I didn’t think I’d say this about some vegan cabbage rolls, but they melt in your mouth! They have become my favorites and I hope as many of you as possible enjoy this wonderful recipe.

When I decided to stop eating meat, except for fish, for the time being, the first thing I wanted to prepare and find a vegan version of was vegan cabbage rolls. Before I made this decision, I ate meat every day and soups, stews, and salads were completely excluded from my diet. Making vegan cabbage rolls helped me to trust that I would discover many sensational tastes as a vegetarian or vegan. That I will enjoy the taste of many dishes that do not contain meat. From year to year, I updated this recipe because I like vegan cabbage rolls and the greatest satisfaction is when someone else tastes my dish and tells me that they are much better than the ones with meat.

With the same ingredients, you can prepare this recipe for vegan cabbage rolls and cook it in a normal pot on the stove.

Vegan Cabbage Rolls

Ingredients

1 pickled cabbage of about 2 kg
2 medium onions and 1 potato
500 g mushroom and 160 g rice
400 ml tomato sauce
a teaspoon of each basil, oregano, thyme, black pepper, and sweet paprika
1 bunch of dill and 1 bunch of parsley
a mixture of 200 ml sunflower oil and 2 teaspoons of smoked paprika
10 black peppercorns
3 bay leaves




Method

  1. Start by cleaning the two onions, the mushrooms, and the carrot. Rap the carrot on a grater with large meshes.
  2. Add a little oil to a large pan and cook the onion and carrot over medium heat for 10 minutes. Then add the chopped mushrooms.
  3. After another 15 minutes, add the rice, dill, parsley, and a teaspoon of each spice: basil, oregano, thyme, black pepper, and sweet paprika. Mix well and cook on medium heat for another 5 minutes.
  4. While the composition is cooking, wash the cabbage well with cold water and prepare the sheets for the vegan cabbage rolls. Remove the spine of each sheet with a knife. Depending on the size of the leaf, divide it into two or three sheets.
  5. Start to fold the vegan cabbage rolls. Put half of the tablespoon of the composition in each sheet and wrap tightly the lengths of the sheet over the composition and then roll tightly, as a burrito.
  6. At the bottom of the pot, put a thin layer of shredded cabbage and tomato juice. Place the vegan cabbage rolls side by side in the pot. On top of these, add another thin layer of chopped cabbage, peppercorns and bay leave.
  7. And now it’s time to add the secret ingredient. Mix 200 ml of oil with two teaspoons of smoked paprika. Then add enough water to the pot to cover the rolls.
  8. Bake at 160 degrees for 3 hours. Cook them without the lid for the last half hour.

Vegan cabbage rolls cooked in a clay pot – a culinary delight

For 4 years in a row, every cold season, I began to prepare the delicious vegan cabbage rolls in a clay pot. Every year I changed and tried something new in the recipe to reach the best taste. I was afraid of ruining them. But I dared to try, to discover, and to receive criticism and advice from the tasters :). And so, from word to word, I heard from a friend, who cooks cabbage rolls with meat and everyone praises her recipe. She uses a mixture of barbeque spices to season them.

What did I do immediately after I found out? I went to the store and looked up what barbeque seasonings are made from. And that’s how I found out the ingredient that makes a big difference in taste: smoked paprika. So please, if you make this vegan cabbage rolls recipe, add the smoked paprika. The taste is indescribable, you will prepare the most delicious dish.




Why, when I gave up eating meat, did I first want to prepare vegan versions of the meat dishes I liked?

Well, I’m not a fan of vegan reinterpretation of meat recipes in any way. But when you make a big change in your diet, you have all kinds of challenges, thoughts, and ideas. I say that giving up meat for me was a major and radical change. I only used to eat only meat, sausages, and fast food, in other words, only crap.

For me, the transformation of the classic meat cabbage rolls into vegan cabbage rolls – in the conditions where I didn’t eat mushrooms or rice, was a big challenge. We have evolved both in terms of cooking techniques and in terms of taste education. For those who do not have a culinary balance, as I was, in an extremely unhealthy extreme, it is very difficult to make a change like this. That is why I like to present you with a lot of delicious recipes to help you to cook deliciously without meat and find more amazing tastes.

I wanted to prepare vegan versions of the dishes I liked, to find hope, and similar tastes, which motivates me to continue my challenge of changing my food style. Before I took this step, I didn’t cook, I didn’t have anything to cook. I didn’t even know I could cook something edible. And that’s how a wonderful journey began.

I discovered so many delicious tastes and recipes that I don’t even know what to choose to recommend you to try again. All the recipes on the blog I try to prepare as well as possible and to be as authentic and tasty as possible. Another very popular vegan recipe on the blog is the pea dish. It is the recipe that I prepare quite often, as it is super simple and quick to prepare, super tasty, and healthy.




Passion, courage, desire for knowledge, and development.

Giving up meat is my greatest achievement. It helped me get a lot of satisfaction, and learn a lot about myself, my identity, and my body. I didn’t think I could resist the temptations. The hardest thing is, both morally and physically, when the people around you, either from work or acquaintances, try to convince you that the choice made is not correct, and even more, to tempt you with various meat dishes. I learned many things from here. I’ve noticed that when you try to do something different, the people around you change. I looked at them with pity and they looked at me with admiration and longed to be like me.

In addition to all the benefits and satisfactions I have enjoyed from giving up eating meat, I have also chosen my friends. They chose themselves. It was very funny to see how stupid some people are and a little sad to learn that others are unable to respect the customs and choices of those around them. Overall it was a lot of fun, even at the beginning when it was harder. After 5 years of giving up eating meat, a road strewn with various challenges, now it’s even more fun to see those fierce people, searching and trying or claiming to have also adopted a healthier lifestyle. However, I am happy and hope that they also manage to evolve as they wish.
