Shrimp and Zucchini Pasta

I am glad to present you with an easy recipe that will delight your taste buds – Shrimp and Zucchini Pasta. Every time I need to cook something quick, I choose a pasta recipe. These are suitable for any season and are always a delight for me. This shrimp and zucchini pasta has an indescribable flavor. The creamy white sauce made of cream and parmesan seasoned with pepper and oregano and the aroma of garlic give this dish a unique flavor. It is the best recipe for dinner, after a hard week, as a treat for your body. Enjoy with a glass of wine and in the company of a loved one.

Shrimp and Zucchini Pasta

Ingredients

160 g pasta – tagliatelle
200 g fresh shelled shrimps or 250 g frozen
1 zucchini
100 ml olive oil
200 ml cooking cream
5 cloves of local garlic
1/2 teaspoon of each spice: black pepper and oregano
80 g grated parmesan




Method

  1. Wash the zucchini and cut it into thin slices.
  2. Put 50 ml of olive oil in a pan and cook the zucchini on low heat for 10 minutes. Then put them on a plate and continue cooking shrimp.
  3. In the same pan add the other half of the olive oil along with the shrimp.
  4. Cook them on low heat and stir gently from time to time for 10 minutes.
  5. Meanwhile, put water in a large pot and boil the pasta according to the instructions on the package. Depending on the type of pasta used, the cooking time differs. It is important to add a little salt to the pot in which you boil the pasta, just as you are adding the pasta. Otherwise, if you add salt to the water from the beginning, until you add the pasta when the water boils, the salt may dissolve. It is important not to add oil to the water in which the pasta is boiled, regardless of the pasta recipe you are cooking, as the oil makes the pasta slippery and the sauce used later does not combine perfectly with it.
  6. After the shrimp were cooked, add the cooking cream, pressed or finely chopped garlic, black pepper, oregano, and grated parmesan to the pan.
  7. Then add zucchini and cook on low heat for another 5 minutes. Mix gently with slow movements from time to time.
  8. Put the boiled pasta over the shrimp composition, along with a little water (half of the ladle) from the water in which they were boiled.
  9. Mix gently until the pasta is incorporated into this delicious sauce and after 2 minutes turn off the heat.

Secrets of preparing pasta with shrimp and zucchini:

  • the zucchini must be cooked until soft. That’s why we have to cook it on low heat and stir it from time to time. It should not burn because then it becomes a bit bitter and spoils the taste of the final dish.
  • cooking cream can also be vegan. When you choose the product, don’t forget to read the list of ingredients and choose the product with natural ingredients that you know and not all kinds of weirdness. It is important to prepare all the dishes with food and products as natural and quality as possible because the final dish will be tastier.
  • be careful when choosing the shrimp, that they are as fresh as possible, and that they do not have a strange smell or are sticky. If you are not sure that they are fresh, it is better to choose the frozen ones. They keep very well in this form and you definitely won’t go wrong.
  • with this recipe or any recipe that contains parmesan, my advice is not to add extra salt. Parmesan is salty and gives a natural taste to the final dish, and an excess of salt will spoil everything. It is necessary to feel the balanced combined natural flavors than just a taste of salt.

Pasta, shrimp, zucchini, and creamy garlic parmesan sauce… what could be better than that? The only thing better than this is a good wine with this fabulous dish. Any dish containing shrimp and garlic goes perfectly with Sauvignon Blanc wine. So these gorgeous pastas have found their perfect match.

In the recipe above, you can add extra flavor with a little wine added over the shrimp, 2 minutes before you add the cream.
