Roasted Garlic Butter Potatoes

Is there anyone who doesn’t love Roasted Garlic Butter Potatoes? I can’t wait to make this recipe, especially in potato season. It is a simple, colorful, and effective recipe. It is very suitable for any part of the day and also perfect for feast days when we have guests.

Roasted Garlic Butter Potatoes

Ingredients

8 potatoes
3 cloves of garlic
1 tablespoon butter
2 tablespoons olive oil
1/2 teaspoon of chili flakes
a little salt
sauce to serve:
200 g Greek yogurt
1 bunch of dill
served with fresh green garlic, goat cheese, and a spicy red pepper




Method

  1. Choose the most beautiful potatoes, wash them well, and whether you use new or old potatoes you can cook them with the skin on. Cut them in half and with the knife make some fine cuts, as seen in the picture.
  2. Meanwhile, preheat the oven to 400°F. Put a baking sheet in a large tray and arrange your beautiful potatoes on it.
  3. Put the tray in the preheated oven and let them bake for 30 minutes. The potatoes were medium in size. If you have larger potatoes, you can leave them in the oven for 5-10 minutes longer.
  4. Mix the butter with two tablespoons of olive oil in a bowl. Mix well until the composition became homogeneous and then press the garlic and add it to the composition.
  5. While the potatoes are in the oven, prepare the yogurt sauce. Wash the dill well and chop it finely. Then mix it with Greek yogurt and put the sauce in the fridge. This sauce must be cold when you serve this dish because it is super fresh and intensifies all the flavors.
  6. After 30 minutes of standing in the oven take out the tray, and on each half of the potato, add 1/2 teaspoon of the butter and garlic mixture created earlier.
  7. Put the tray back in the oven for another 5 minutes of baking. The butter mixture has melted and flavored the potatoes.
  8. When the potatoes were cooked take the tray out of the oven and sprinkle potatoes with some salt and chili flakes.

Unfortunately, potatoes are associated with unhealthy and fattening foods, since most of us are used to eating them fried and in difficult-to-digest combinations. Yes! French fries are fattening, so the studies tell us. That is why it is advisable to always choose the healthiest cooking options and only occasionally eat fried potatoes.

How often do I eat french fries?

In the past, I ate a lot of fried potatoes, almost daily, but in recent years I have gotten used to enjoying and preparing these vegetables in the healthiest ways possible. Fried potatoes have become something of a tradition only in potatoes season. I indulge 2-3 times a season with french fries. Then I move on to preparing the potatoes as healthily as possible. Because YES!, studies show us that these simple and cheap vegetables offer us many benefits when we cooked them correctly.

To enjoy benefits such as stimulating the brain, improving vision, maintaining healthy bones, and regulating intestinal transit, it is important to boil them. Potatoes contain fiber, potassium, vitamin C, vitamin B6, calcium, and magnesium.

Also, a healthy option for cooking instead of fried potatoes is to cook them in the same cut form (like french fries) but in the oven. Potatoes baked in the oven are not harmful because they are not fried in oil at high temperatures. After you try this version, you will see that it will also become your favorite. You’ll forget about oil-soaked fries. This method is PERFECT for children. Furthermore, we don’t have to worry about washing dishes full of oil anymore, the kitchen becomes easier to clean and keep clean because we don’t have to struggle to wipe oil stains from everywhere.




Why do I think cooking these roasted garlic butter potatoes is a very good option for a healthy meal?

When I make these baked potatoes I like to serve them with some Padron Peppers. They fit perfectly and are very quick to prepare. You can prepare a double portion of potatoes and keep them in the fridge for the next morning when you only need to put in the pan some Padron peppers and then enjoy a simple and delicious breakfast. I also like to make myself orange juice and feel like I’m on vacation 🙂 You can also cook them the night before going to the office, arrange them nicely in a box, and put them in the fridge until the next day in the morning when you have to take them with you to the office. And for office lunch, you enjoy a delicious dish.

It is also an excellent choice when we have guests. All we have to do is prepare a big meal with some sensational and simple recipes, and the guests will be super excited and happy. So, in addition to these baked potatoes, add some Padron peppers, a vegetable salad, hummus, guacamole, and some pita. Prepare some fluffy pancakes the night before and you’ll get lots of compliments :))
