Oyster mushroom curry

Oyster mushroom curry… I don’t know what that sounds like to you, but to me, it sounded like something I would never eat. But, because there’s always BUT… what could be more flavorful and healthier than that? Instantly, it became my favorite recipe and I love the unique taste that this dish gives me. I like this recipe and I hope you do too. It is a balanced recipe and super simple to prepare.
Because I always try to cook as diverse as possible and always test new recipes, I miss cooking this super healthy curry more often. When I prepare and enjoy it, I always ask myself: why don’t I cook it more often? It’s a unique, super aromatic taste that makes me rank this dish at the top of my favorites. I hope you and your loved ones enjoy this goodness!

Oyster mushroom curry


400 – 500 g oyster mushroom
50 ml olive oil
200 ml vegan whipping cream for cooking or coconut milk
3 garlic cloves
5 tablespoons of tomato sauce
1 tablespoon of curry
1/2 teaspoon of thyme
1/2 teaspoon of black pepper
1/2 teaspoon of turmeric

suggestion for 2 servings: 100 g rice


  1. Wash the mushrooms, peel them, and cut them into small pieces of about one centimeter.
  2. Put the olive oil in a large pan, add the chopped mushrooms and cook them on medium heat until the water left by them decreased (around 20 minutes). Stir gently from time to time.
  3. Then add the spices: curry, turmeric, thyme, and pepper, mix well, and cook on low heat for 2-3 minutes.
  4. Incorporate the tomato juice and garlic pressed or finely chopped. It smells amazing and all the flavors blend nicely :).
  5. Mix for 2 minutes on medium heat and then add the vegan cooking cream. Mix gently until the composition was homogenized and covered with a lid.
  6. Set about preparing simple rice – boil it in water according to the instructions on the package.

In addition, it is a recipe that helps us to add turmeric to our diet, which is very healthy. I tried to find a balance in taste, as this dish has a different flavor than the flavors we were used to. Why do I choose to prepare and try this different taste of oyster mushroom curry?

Because… TURMERIC 🙂 Yes, turmeric is a very healthy spice and I wanted to introduce it into my diet. Researchers say it is the healthiest spice and many people have started incorporating it into their DAILY diet. I haven’t reached that point yet because my first contact with turmeric was a very strange one and it took me a while to get used to consuming it.

I made a creamy red lentil soup to which I added turmeric…the taste was ok, but it smelled…horrible. And after this first experience with turmeric, I was sad and thought that I won’t find a delicious creamy lentil soup or a delicious dish that contains turmeric. Luckily I find the balanced taste and the best recipe for the creamy lentil soup. You need to try it, is very delicious and this soup makes my days happy.

And so I set out to find a balanced and sensational taste of this oyster mushroom curry. I like to serve it with rice, cooked according to the instructions on the package, and with a baked beet salad, which is also part of the category of healthy dishes.

Now I can say like a popular chef from Romania that I would eat curry in the morning, at lunch and dinner! 🙂

And because I had to find a good recipe for the creamy lentil soup, I complied and found a super good recipe that was praised by many people. The combination of spices used and the flavor of the cooked vegetables gave it the best taste I ever tried and it is now my favorite soup.

Turmeric + Mushrooms = delicious and healthy

Regarding the studies done to show how healthy turmeric is, I highly recommend (although the title is a bit odd) that you read the book: How Not to Die by Michael Greger. Here I discovered a lot of information about turmeric and other useful facts about nutrition. They changed both my way of thinking and my eating style. It is the kind of book that needs to be studied and read over and over again.

Like mushrooms, turmeric is a natural anti-inflammatory and increases the antioxidant capacity of our body. Therefore, this recipe is the perfect match. It is preferable to eat this dish warm after you cooked it because if you heat it the next day, for example, it is no longer as delicious. If I have any left, the next day I like to eat it cold, it is much tastier.

I remember reading the book super fast because it made me curious to learn more. The idea of ​​the book is not that we will live forever 🙂 but if we take care of our health and apply some simple rules, as long as we live we will have a peaceful and healthy life, avoiding the diseases of old age. What I applied the best from this book was to eat a kiwi in the evening before going to bed. It contains nutrients that help me to relax and give me a feeling of well-being, banishing anxiety before sleep.
