Nettles with parmesan

I finally found a way to enjoy a healthy dish that I avoided in the past because I didn’t like the taste of nettles, but now I enjoy every nettles season with this delicious nettles with parmesan recipe. Yes, yes. I have a delicious nettles parmesan recipe. Of course, we serve them with extra parmesan, egg, and a beautiful polenta.

Nettles with parmesan

Ingredients

500 g nettles
1 onion
1 carrot
1 red pepper
4 cloves of local garlic
1 tablespoon flour
50 ml olive oil
the juice of half a lemon
300 ml of water
3 tablespoons of parmesan




Method

The bad news is that nettles have to be picked up and cleaned. The good news is that in the markets there are nettles already cleaned by the sellers, a little more expensive but that’s normal. Therefore, all you have to do is wash them under hot water.

  1. Put the already-cleaned nettles in a large bowl and washed them. Drain them well and add them to a large pot of boiling water.
  2. Boil them for 10 minutes on high heat, then remove them on a wooden chopper and let them cool a little.
  3. Meanwhile, peel and chop the onion, carrot, and red pepper.
  4. In a large pan, put the oil and finely chopped onion, on medium heat, for 5 minutes. Then add the carrot and cook for another 5 minutes after that add the red pepper. After another 5 minutes, put the water over the vegetables and mix gently.
  5. Chop the nettles finely and add them to the pan over the vegetables.
  6. Mix the flour with 3 tablespoons of cold water until you will obtain a sauce without lumps, which you need to add over the nettles.
  7. Mix gently, put the pressed garlic, and the lemon juice.
  8. Cover the composition with a lid and let it boil on medium heat for another 15 minutes, then turn off the heat and add the grated parmesan.

Prepare quickly a polenta and a fried egg and enjoy this goodness. Nettles with parmesan, an amazing culinary delight!

My experience with nettles 🙂

Nettles are what tell us that spring has come. I’ve always liked to associate seasonal fruits and vegetables with the changing of the seasons. I usually try to make the most of these because they make me feel good and that pleasant feeling of a new beginning appears. From a culinary point of view, both spring and autumn offer us the most delights.

For a long time, I didn’t want to hear about eating nettles, in fact until I created this blog I couldn’t find an acceptable taste for them. Even when I was little, I didn’t eat nettle food, so the taste was not part of a pleasant childhood memory.

But as nettles are very healthy, I need to change myself a lot in recent years, from not eating/tasting anything new, to experimenting and being curious about as many dishes and tastes as possible. This process made me realize that no matter the situation, whether it’s something personal or something culinary, it’s best to try new things. When I was very stubborn about only eating what I knew for sure 100% that I liked, I lost a lot. Since I changed my perspective I discovered a lot of absolutely sensational tastes.

But back to nettles. I found a method to manage to like this dish a lot. I always apply this method to dishes that I am not sure are to my taste, but I want to eat them because they are very healthy. The idea is to add something you like enough to find a balanced taste. Therefore, I prepared nettles with parmesan, as the parmesan gave it a flavor that I like very much. You can also add your favorite spices, an extra flavor of garlic, or whatever you like.




What did my friends say about eating nettles with parmesan?

When I discussed nettle dishes with my friends, I expected everyone to hate this ingredient. But I was surprised to see that about half were in favor and the other half against. I convinced those who were against it to try my recipe with parmesan and of course to add what they want if they feel the feedback was positive and this made me very happy. From those who love dishes with nettles, I managed to get more information about what kinds of recipes there are and how they cook these nettles beneficial for our bodies.

Recipe ideas with nettles:

Nettles are often used instead of spinach, so a very good idea for a healthy and delicious dish is a Greek-style pie with nettles. Of course, you can even add a little cheese, especially when you are trying to eat nettles for the first time and you are not familiar with their taste. An extra taste of cheese and a little garlic will make a sensational pie that will probably become a tradition to prepare every time the nettles appear.

Another interesting suggestion is the nettle soup recipe. I admit that I have never tasted or prepared it, but I have to do this. I think a good option is even a nettle soup.

Another option is nettle tart, similar to spinach tart. I think it’s super delicious and only good to prepare when you have guests. Tarts are always a good idea to serve guests. Whether it’s with nettles, spinach, cheese, salmon, or even tuna, it’s always a great choice.

An interesting idea, and one I hadn’t thought of before, is a risotto with nettles. I am a fan of risotto and I love to prepare it and enjoy it with a glass of red wine. It is a treat that I always associate with a trip to beautiful Italy. My favorite risotto is creamy vegetable risotto. It is perfect!

A dish that I’m a little skeptical about but curious about is nettle pesto. Yes, yes, many prepare this sauce and enjoy a new flavor and a health boost during nettle season. I think it’s a bit weird but I’ll give it a try and get back to you with feedback.

And a favorite breakfast idea is an omelet with nettles and cheddar cheese. Delicious!
