Green Shakshuka

For me, green shakshuka is the perfect breakfast. Rich in nutrients, this recipe gives my body a boost of vitality. It is the perfect breakfast to start a more demanding day, as both the flavor and all the ingredients used will give you the energy you need for the whole day. I’m so glad I found this recipe and that I can share it with you.
The classic shakshuka recipe is the one with tomato sauce and lots of spices. A delicacy, a superb, traditional North African recipe. I wish I could thank the person who invented this wonder. At the moment, I have chosen to cook and share the green shakshuka recipe with you because I want to enjoy together the freshness of the seasonal ingredients. Green Shakshuka is easy to customize with your favorite ingredients. However, the flavor of leeks, the aroma of garlic, and the delicious feta cheese should not be missing from this dish.

Green Shakshuka


3 eggs
50 g feta cheese
1 small zucchini
100 g baby spinach
100 g pre-boiled peas
1 small red onion
3 cloves of garlic
half a leek
2 tablespoons of pesto
50 ml olive oil

1/2 bunch of each coriander, parsley, and dill
1/2 teaspoon each of black pepper and chili flakes


  1. In a large pan, put the olive oil together with the finely chopped onion. Cook it for 5 minutes on low heat.
  2. Meanwhile, cut the leeks into small pieces and add them to the pan.
  3. Grate the zucchini on a large-mesh grater and add it to the pan, mix gently, and continue to cook on low heat for another 5 minutes.
  4. Add the pre-cooked peas and cover the pan with a lid.
  5. After another 5 minutes, add baby spinach, pressed garlic, finely chopped coriander, and parsley. Mix well and cook for another 3 minutes on low heat.
  6. With a spoon, create three spacious spaces in the composition, in which you add the eggs to fry them. Put the lid on and cook continuously on low heat until the eggs are evenly fried.
  7. Turn off the heat and add pesto, grated feta, finely chopped dill, pepper, and chili flakes.

Why green Shakshuka?

Well, the green version is much healthier than the classic shakshuka version. Both recipes are delicious and very healthy. But the addition of spinach and peas helps our body with extra nutrients that are very important to keep us healthy.

What is Shakshuka?

Shakshuka is a vegetarian dish loved all over the world. It has become very popular on social media as it is a good-looking dish that piques your curiosity. The original recipe is made with tomato sauce and is faster to prepare because you can prepare the sauce the night before or buy it in the morning for breakfast just add the sauce, eggs, spices, and fresh greens.

Shakshuka is known as an affordable and filling dish. It can be adapted to your needs and can be prepared with ingredients you usually have in the fridge. I like to try as many variations as possible and prepare this delicious breakfast every time I get the chance.

The famous Shakshuka competes with two other traditional dishes from the Middle East, namely the famous hummus and the superb falafel. All three have their well-deserved place in our hearts and our kitchens, but also top restaurants.

As I also discover these traditional dishes from this culture, I notice that this kitchen is also one with very healthy dishes and it is a model for me to follow.
