Greek Potato Salad

This Greek Potato Salad is downright special. From one bowl you can taste the unique flavors of Greece. Olive oil, feta cheese, capers, Kalamata olives, lemon juice, and fresh greens take you far away… far away in a traditional Greek village. What I like about this recipe is that it’s quick to prepare and it’s not a dish that requires constant attention.
I usually enjoy this Greek Potato Salad for lunch. It is also suitable for a light lunch at the office, as you can prepare the salad the night before and keep it in the refrigerator and enjoy it the next day. This salad is perfect for serving cold, which makes it a favorite meal even on hot summer evenings when all you want is something light and refreshing.

Greek Potato Salad


1 kg of potatoes
1 red onion
130 g feta cheese
80 g Kalamata olives
2 tablespoons of capers
2 cloves of garlic
50 ml olive oil
the juice from half a lemon
1/2 bunch each of parsley and dill
a few finely chopped mint leaves
1/2 teaspoon each of oregano and black pepper


  1. Start by peeling and cutting the potatoes. If you bought small potatoes, you can cut them in half.
  2. In a large pot, put the potatoes and covered them with water. Boil them on high heat for 20 minutes. Also, cover the pot with a lid to boil faster.
  3. While the potatoes are boiling, you need to prepare in a bowl the mixture of olive oil, lemon juice, pressed garlic, oregano, black pepper, and finely chopped greens.
  4. Cut the onion into small pieces and take the rest of the ingredients to have at hand.
  5. After the potatoes are boiled, drain the water and put them in a bowl. Let them cool for 10 minutes.
  6. Add one by one: the chopped onion, the olives, the capers, and the mixture created earlier.
  7. Mix well, carefully, not to crush the potatoes.
  8. In the end, crumble the feta cheese and add it on top of the delicious Greek Potato Salad.
