Fresh Summer Salad

When summer comes, it seems that the desire for delicious salads also appears. This fresh summer salad is the perfect choice for a relaxing lunch or dinner. It is prepared super quickly, with fresh ingredients that give you extra vitality. I always liked to enjoy the freshness of the ingredients and admire their colors and taste.

When you go shopping don’t forget to choose the most brightly colored vegetables because they contain the most nutrients. This salad is also suitable to prepare the night before, keep in the fridge and eat the next day. I think it’s even better that way. Therefore, it is a special dish that can be a delicious lunch at the office. Be creative and enjoy the freshness of fruits and vegetables.

Fresh Summer Salad

Ingredients

200 g mixed salad or a medium salad
2 medium tomatoes
1 bell pepper
1 cucumber
3 green onions
3 radishes
half a bunch of dill and half a bunch of parsley
black pepper and a little salt

dressing: 1 teaspoon honey, 1 tablespoon mustard, 2 tablespoons olive oil, and the juice of half of lemon

Method

  1. Shred the salad as you like. If you use mixed salad, packed in a bag and already chopped, it is necessary to put it in a bowl of water and wash it well.
  2. Wash well the rest of the vegetables used for this super fresh salad: tomatoes, capsicum, cucumbers, onions, and radishes. Clean them and cut them into small pieces. Chop onion with leaves.
  3. Mix them all in a suitable bowl and start to prepare the dressing.
  4. In another smaller bowl, mix the honey and mustard until smooth, and then add the oil, little by little, and mix well with a whisk. Squeeze out the lemon and mix the juice with the created composition. The dressing is ready to be drizzled over the salad.
  5. Chop the dill and parsley, and mix them into the salad.
  6. Season it with a little salt (very little because it is necessary to feel the taste of fresh vegetables and not the taste of salt) and black pepper to taste.

Does every fresh summer salad have its own story?

When dad found out I made a cooking blog, especially a blog promoting a healthy lifestyle, he wanted to send me a recipe too. So this is his recipe and it’s super delicious. It’s a fresh salad that cools me down on hot summer days. It’s perfect!

Every season makes me think of a new beginning. Summer makes me think in search of recipes that are prepared super simply, and quickly and that makes me take advantage of the freshness and diversification of vegetables. Many studies have shown that a healthy lifestyle from a culinary point of view is when we consume a wide variety of vegetables. So salads prepared with as many vegetables as possible are perfect.

Why do people in certain cities/countries live longer and better?

For example, a lot of research has been done in the city of Okinawa in Japan. It is the city with the longest life expectancy in the world, over 120 years. Besides living longer, they also live well, without suffering from the diseases of old age. Many researchers were curious to know what those people do in particular to manage to stay healthy even past the age of 100. One of the things that make them different from the rest of the population is that they consume over 16 different vegetables and fruits daily. Through this diversification, they bring their body all the nutrients it needs to function very well.

Another interesting book that kept me in suspense and delighted me with a lot of useful information is the book Lifespan written by David A. Sinclair. It explains to us and makes us understand that we add years to life in vain if we do not also add life to the years. These kinds of books and information make me love myself more and take better care of my health. That is why it is necessary to eat as many vegetables as possible daily and the easiest way to do this is to be creative and prepare the most delicious salads.

The inhabitants of the countries around the Mediterranean also have a high life expectancy. That’s why the “Mediterranean diet” is very popular, it’s a very relaxed lifestyle that only gives us benefits. This lifestyle is based on a wide variety of vegetables, fruits, whole grains, olive oil, fish, and seafood, avoiding dairy, sugar, flour, and other processed foods as much as possible.

How can you start to easily change your eating style? To eat only fresh summer salad :)) luckily, just kidding!

From my point of view, the Mediterranean diet is the easiest to adopt. This simple change is an important step towards a healthier life.

How did giving up eating meat help me? Many studies have also shown that, while the meat itself is not very harmful, there are certainly many more harmful products. But I decided to stop eating meat because I love animals very much. In this way, I feel that I help with something every day. What did I achieve later? I realized that I gave up without thinking about sausages, highly processed foods that contain meat, and most importantly, I gave up fast food. What could I get from fast food and not contain meat…I’d rather be without :).

Many people tell me that they could not give up meat for good, as I did because they have some favorite dishes that contain meat. Delicious recipes remind them of the taste of childhood, of tasty dishes that were cooked especially for them by their grandparents. I understand perfectly what they feel and what they want to say. But it is not necessarily necessary to give them up as well. Their consumption can become very occasional and all that is important to do for a healthier life is to give up:

sausage
juices
fast food

…and increasing the consumption of vegetables and their variety.
