Eggplant Salad with Onion

For a tasty Eggplant Salad with Onion, choose the darkest, glossy, fluffy eggplants possible, then a treat is ready to be prepared and enjoyed. I always look forward to eggplant season. I love the smell of baked eggplant! As a child, I would pass by the neighbors’ windows in the neighborhood and feel the sweet, smoky smell of baked eggplants, I would drool and couldn’t wait to get home because I was sure that my mother was also preparing this delicious salad.

Eggplant Salad with Onion


1 kg eggplants – of which about 400 g remain after baking and draining
50 ml sunflower oil
1 medium onion
a spoonful of lemon juice
salt – to taste


  1. Bake the eggplants on the stove flame. Cook each eggplant on one side until the skin was completely burnt, then flip it over and cook it all the way around. They are ready when they are soft all over – around 20 minutes per eggplant.
  2. Put them on a wooden bottom, and with a knife remove the skin, carefully to preserve the browned part underneath, which gives a special baked taste. This is why eggplants do not clean under water.
  3. After you cleaned them, one by one, leave them in a sieve to drain for an hour.
  4. After they were drained, chop the eggplants with a knife/chopper, preferably wooden.
  5. Put them in a bowl together with a spoonful of lemon juice, which helps to whiten them.
  6. Gradually add oil and rub them well with a wooden spoon.
  7. Finely chop the onion (white or red, choose which one you like better) and mix it into the eggplant composition along with a little salt.

It is very important to taste each eggplant after it is cooked. If this is bitter do not add it to the salad. The bitter or spicy taste of eggplants is generally found in light-skinned and dull ones. Always choose dark, shiny, and fluffy eggplants.

Serve this eggplant salad with onion with a tasty pita, tomatoes, and red peppers.

Eggplant salad with onion, a traditional Romanian dish!

I was pleasantly surprised to learn that eggplant salad, as we know how to prepare it from generation to generation, is specifically Romanian. There are many dishes with eggplant, both found in the cuisine of people living around the Mediterranean and those with oriental characteristics. I love eggplant season, and I try to make different recipes with it every year.

I tried to prepare this recipe at home, but so far I have not been able to get that perfect taste that the dish I order has. I find this process like a game, every time I order my baba ganoush I taste it and try to guess what ingredients they used. They have a well-kept secret because, for me, who do not know all the ingredients or rather the spices of the Middle East, it is very difficult to guess and reproduce that delicacy. But I’m not giving up and I can’t wait to present to you a traditional and delicious baba ganoush recipe.
