How do we prepare a Creamy Parmesan Risotto With Saffron or Risotto Alla Milanese? Risotto Alla Milanese is a popular dish in Italy. Preparing risotto seems to me a very good exercise for relaxation. You have to be patient, mix it very gently with slow movements, and just watch it become a delicacy.

Creamy Parmesan Risotto With Saffron sound like that kind of rustic comfort food to me. I was very excited when I prepared this recipe because I had a new ingredient, saffron, and a new taste that I did not know and I was very curious to feel the result.
I describe this risotto as an interesting, light, and velvety dish.

Creamy Parmesan Risotto With Saffron


Vegetable stock:
1200 ml of water
3 small onions, 2 red peppers
1 carrot, 1 parsnip, 1 parsley root
a little salt and a tablespoon of olive oil
330 g Arborio rice
2 small onions finely chopped
100 g butter
100 g parmesan
3 strands of saffron


Cooking vegetable stock

  1. Start by preparing vegetable stock. So clean and cut the onions, red peppers, carrots, parsnips, and parsley roots into large pieces.
  2. Boil them in 1200 ml of water, on high heat, with a little salt and a spoonful of olive oil – for 20 minutes.

Cooking creamy parmesan risotto with saffron

  1. In a large pan, add half the amount of butter and the two small onions, finely chopped. Cook them on low heat for 7-8 minutes and stir them gently from time to time.
  2. After the onion was cooked, add the rice to the pan, mix it gently, and cook it on low heat for 1 minute. It takes on the delicious taste of the cured onion.
  3. Add two ladles with the vegetable stock created earlier. Mix it gently and cook it on low heat for 3 minutes.
  4. Add after about 2-3 minutes another ladle with vegetable stock and mix a little and gently with a wooden spoon or a heat-resistant spatula. Repeat this process until you finish the vegetable stock and in the last bowl of stock, add the saffron to dissolve evenly before adding it to the pan.
  5. Finally, add the parmesan and the remaining 50g of butter, mix slowly, and turn off the heat.

This creamy parmesan risotto with saffron is a great choice when you want to eat something different and feel unique flavors.

Secrets to obtain a creamy and perfect risotto:

  • To prepare a creamy risotto you need rice rich in starch. The most suitable types of rice for risotto are Arborio and Carnaroli.
  • It is advisable not to wash or leave the rice in water before you cook it, as it loses the amount of starch and the risotto will not come out so creamy.
  • It is very important that whatever risotto recipe you choose to make, the rice should always be cooked on low heat. If you also like risotto, I have another great recipe for creamy vegetable risotto. My friend told me this recipe and since then it has become my favorite risotto.
  • From time to time you need to stir gently, with slow movements so that the rice grains touch each other. Thus, the starch that forms creaminess is released.
  • If you do not use mascarpone or butter for extra creaminess, it is advisable to add the water gradually about every 2 minutes and at the end add vegan butter, creamier vegan cheese, or olive oil.
  • Always let it rest for 10 minutes before serving.
  • Optionally, you can add a little white wine towards the end, 5 minutes before turning off the fire, for a flavor that will make a difference.

How to preserve and store risotto?

The risotto must be enjoyed 10 minutes after turning off the heat. This is to enjoy the best culinary experience. But sometimes I also cook a larger quantity to have the next day. When I make more, I refrigerate it in an airtight container for up to 3 days.

What happens when risotto sits in the fridge? It hardens as the starch from the rice is released. Therefore when we eat it it is necessary that when we heat, we add a cup of heated water over it and a tablespoon of olive oil per serving. We have to give it as much creaminess as possible.

And if you don’t want to eat it in the form of risotto after storing it in the fridge, you can create risotto balls to fry. A delicacy. Therefore, place a small piece of mozzarella in the middle of the risotto ball – which you shape with your hands. Then dip the ball in beaten egg and then in breadcrumbs seasoned with your favorite spices. Heat oil in a large pan and dip the rice balls in the oil for 2-3 minutes. This recipe is called arancini – rice balls and it is a recipe that saves us from food waste.

I like to cook recipes from Italy the most. They are simple, and quick, with fresh ingredients and the taste is always the best. I love to create a little bit of Italy at home. Another type of risotto popular in the Mediterranean diet is risotto with seafood and/or shellfish. Every time I visit Italy, this is my choice for a typical Italian romantic dinner. Of course, it is served with a Chardonnay or Pinot Bianco white wine. Rainbow on the palate. 🙂
