Creamy Mushroom Soup

It sounded strange to me – creamy mushroom soup. I couldn’t imagine a taste that I liked, like soup cream although I loved mushrooms cooked in any way but not as soup. But I set out to find a delicious recipe, which gives a fine texture to the dish, which would make me consume the mushrooms in this form and of course present to you a delicacy that is very easy to prepare.

Creamy Mushroom Soup

Ingredients

500 g mushrooms
1 onion
1 potato
4 local garlic cloves
200 ml vegan cooking cream
1/2 teaspoon of black pepper
1/2 teaspoon of sweet paprika
1/2 teaspoon of  thyme
1/2 teaspoon of dill
2 tablespoons of lemon juice
1 L water and 50 ml olive oil




Method

  1. Start by washing and cleaning the mushrooms. Cut them into large pieces and sautéed them in olive oil in a large pot, together with their tails.
  2. Meanwhile, peel the onion and the potato and cut them into large pieces. Add the water over the sauteed mushrooms, onion, and potato and cook them on medium heat for 20 minutes.
  3. Add the cooking cream, lemon juice, pressed garlic, and spices. Mix well and cook on low heat for another 10 minutes.
  4. Blend the whole composition and enjoy this delicious cream of mushroom soup.

Choosing mushrooms is very simple. All we have to look for to choose some fresh mushrooms that are only good to eat is that they do not have a bumped, stained, or broken surface. They should be stiff to the touch and not have a pronounced smell.

Cleaning and preparing mushrooms for cooking is quite quick. Wash them well under cold water, remove the lower part of the mushroom tail with a knife – around a maximum of 5 mm and optionally peel the mushrooms. At first, I used to throw away the mushroom tails and I was making a big mistake as they are just as good as the mushroom caps. Thus we were contributing to unjustified food waste. The tails of the mushrooms are finely chopped and cooked like caps.




How to store mushrooms?

Storing mushrooms has always been a challenge for me because by not following a simple rule I was contributing to food waste. I almost always left the mushrooms in the refrigerator, improperly packaged, and they spoiled before I could cook them. To keep mushrooms fresh for up to a week, it is necessary to store them in the refrigerator. They contain a lot of water and keeping them cold is the best way to keep them fresh. But they must be properly packed, namely:

  • if you buy prepackaged mushrooms all you have to do is store them in the refrigerator. The box in which they are packed is perforated and allows air to enter so as not to maintain humidity. If you do not use all the mushrooms from a box when you cook, before storing them in the refrigerator it is necessary to cover the box with plastic wrap and make a few holes in it to make sure that air enters.
  • if you buy mushrooms in bulk, it is necessary to wash them well, let them dry or wipe them with a paper towel. Then you can put them in a bowl or box dish and cover them with plastic wrap. Be sure to make some holes in the plastic film so that air can enter the box.
