Creamy Lentil Soup

This creamy lentil soup is my favorite. Lentil soup is very healthy, light, and quick to prepare. The flavored of baked vegetables gives them a taste that is hard to match. The taste of the spices gives an oriental and pleasant flavor to this creamy lentil soup. I am happy to share such a simple and delicious recipe with you. And I love enjoying the positive feedback I get every time someone makes this goodness. I always have a supply of red lentils in the kitchen, and although I enjoy this soup quite often, I actually can’t get enough of this flavor.
Besides, lentils are very healthy, baked vegetables are just as healthy and full of nutrients, and spices (especially turmeric) only bring benefits to our beautiful bodies!

Creamy Lentil Soup


250 g red lentil
1.8 L water
1 onion
1 potato
1 carrot
1 parsnip
1 big tomato
1 red pepper
3 garlic cloves
50 ml olive oil

1/2 teaspoon from each: sumac, turmeric, basil, sweet paprika, smoked paprika, oregano, thyme, and black pepper piper


  1. First, put the lentils in a bowl of cold water for removing any possible impurities.
  2. Clean and cut the onion, potato, carrot, and parsnip into large pieces. The advantage of cream soups is that you don’t have to waste time chopping the vegetables because you put them in the blender anyway after baking/boiling them.
  3. Cut the red pepper in half lengthwise, clean it of the seeds, and remove the white parts from the inside with a knife.
  4. Put the tomato and the cut vegetables together with the olive oil and a little water (a large glass of water) in an oven tray and then baked them in the oven for 40 minutes at 400°F. Optionally, in the last 3 minutes you can set if you have this option in the oven: top heat with ventilation, so the vegetables brown a little and give the lentil soup a sensational taste.
  5. Meanwhile, in a large pot, boil the lentils on medium heat in 1.8 L of water for 20 minutes.
  6. When everything is ready, add the lentils, cooked vegetables, pressed garlic, spices, and 2-3 ladles of boiled water (from the water in which the lentils were boiled) into the blender.
  7. Blend the composition until it became homogeneous and add the rest of the boiled water. You can add the rest of the boiled water little by little until you reach the desired consistency. I like the consistency that includes all the water in which the lentils have been boiled. 🙂

I often choose to make this creamy lentil soup because it seems to me to be the simplest recipe, the most flavorful and it is prepared super quickly. You only need a blender, lentils, aromatic spices, and cooked vegetables.

Lentils are the oldest cultivated legume worldwide. It’s a must in many kitchens and I’m glad it’s also a must in my kitchen. Having stocks of lentils makes me feel good :).

Lentils are rich in soluble fibers which help stabilize blood sugar and can help lower cholesterol and insoluble fiber which we all know is good for digestion. Proteins give us the necessary energy we need and help keep us full for longer.

What’s more, a cup of cooked lentils provides us with 90% of the required daily amount of folic acid. Of course, it also contains vitamins and minerals that help our body feel and function well. I only have good things to say about this fabulous lentil.

Lentils are very easy to introduce into our diet as they can be used in almost any type of meal. From salads to sauces, to soups, to stews, and even curries.

  • in salads, it is necessary to boil for 15 minutes on high heat a small number of lentils, right in a kettle, while you cut and prepare the vegetables for the salad. Drain the water in which they boiled and add the lentils to the well-seasoned salad. This is how you add so many benefits to your wonderful body.
  • lentil soup sounds strange but you can prepare it exactly like bean soup except that it only requires 15 – 20 minutes of boiling and it is not necessary to change the water after the first boiling like with beans. Add your favorite spices and enjoy an easy-to-prepare delicacy.
  • sauces… yes, yes. Have you ever added cooked lentils to guacamole, salsa, or even hummus?
  • lentil stew – what the heck!!! it’s like the vegan pea recipe. If you didn’t know yet (although I feel like mentioning it in every article) is the best recipe for pea food. It is the perfect taste that you can ever eat!
  • I haven’t made the lentil curry yet, but I did make an oyster mushroom curry. It’s sensational and every time I cook it after a long break I ask myself: why didn’t I cook this goodness more often? As a famous chef from Romania says: I would eat curry in the morning, at lunch and dinner.
