Creamy Chanterelle Risotto… a culinary delight! I, for one, can’t wait for the Chanterelle mushrooms season. Year after year I enjoy these sensitive and delicious mushrooms. Because every year I prepare the famous omelet with Chanterelle mushrooms, I decided to try something new this year. And so this creamy vegan Chanterelle Risotto recipe was born. I was nervous, I didn’t want to spoil the mushroom goodness, but it turned out to be a sensational dish.
The unique flavor of freshly cooked Chanterelle together with delicious spices and a fine hint of garlic give this risotto an unforgettable taste. Enjoy a delicious dinner with your loved one, simple and quick to prepare, which will delight all your senses.

Chanterelle Risotto

Ingredients

120 g Arborio / Carnaroli rice
350 – 400 g Chanterelle mushrooms
4 cloves of local garlic
50 ml of olive oil and 400 ml of water
60 g vegan butter
a teaspoon each of salt, pepper, oregano, basil, and thyme
1/2 bunch of parsley
30 ml of white wine – the Chardonnay variety

optional: chili flakes




Method

  1. After washing Chanterelle mushrooms well, cut them into smaller pieces and add them to a large pan, along with the olive oil.
  2. Cook them over high heat for 15 minutes, stirring occasionally with a wooden spoon. Cover with a lid.
  3. After the Chanterelle mushrooms were cooked, add the pressed garlic and mix gently.
  4. Then add the rice along with 200 ml of water and let it cook slowly on low heat. It is important to cook the risotto on low heat and to stir from time to time with slow movements.
  5. After 10 minutes on low heat, add the spices along with the remaining 200 ml of water and let it continue to cook on low heat.
  6. After another 10 minutes, add the vegan butter and gently mix until it will become evenly incorporated.
  7. Add the wine and mix it gently.
  8. Meanwhile, finely chop the parsley and put it in the pan, on top of the creamiest risotto.
  9. After 5 minutes, turn off the heat and let the pan cover with a lid for about 10 minutes. Then enjoy the most delicious and creamy Chanterelle risotto.

Secrets to getting a perfect risotto:

  • To prepare a creamy risotto we need rice rich in starch. The most suitable types of rice for risotto are Arborio and Carnaroli.
  • It is very important that whatever risotto recipe you choose to make, the rice should always be cooked on low heat.
  • From time to time you need to stir gently, with slow movements so that the rice grains touch each other. Thus, the starch that forms creaminess is released.
  • If you do not use mascarpone or butter for extra creaminess, it is advisable to add the water gradually about every 2 minutes and at the end add vegan butter, creamier vegan cheese, or olive oil.
  • Always let it rest for 10 minutes before serving.
  • Optionally, you can add a little white wine towards the end, 5 minutes before turning off the fire, for a flavor that will make a difference.

Typical Italian dinners are the most loved. And because unfortunately, we don’t all live in Italy to enjoy the best cuisine in the world (in my opinion) we certainly create it at home. Because it is very easy and fast.

But, let’s move on to serious things! Let’s put holiday thoughts aside and see what wine goes best with this Chanterelle Risotto. Well, its creaminess, the taste of wild mushrooms, and the subtle aroma of garlic go best with white wine. The Chardonnay variety is perfect to give extra flavor to the risotto towards the end of its cooking. But also to enjoy a sensational taste when you match a glass of Chardonnay wine with a creamy Chanterelle Risotto. It also goes very well with the Pinot Noir wine variety which gives a fine, delicious, and wild taste to this perfect risotto.

How do store fresh Chanterelle mushrooms and how long can you keep them in good condition before preparing them?

How do we store mushrooms?

Regardless of the type of mushrooms bought, it is advisable to store the mushrooms in the refrigerator in their packaging from the store. Those from the store or from the warehouses from which they deliver, pack them the best because they must not spoil until they are sold. Therefore, we just need to put them in the refrigerator.
If you buy the mushrooms in bulk from the store, or from the market, where they are not packed by professionals, it is necessary to wash them well as soon as you get home. Then let them dry or wipe them with a paper towel. Clean and dry, they should be placed in a bowl or casserole and covered with plastic wrap. Be sure to make some holes in the plastic wrap so that air can enter in the bowl.

How long can you keep mushrooms before you cook them?

Mushrooms should be kept in the refrigerator, and properly packaged. They can be kept for up to a week to enjoy their freshness and quality.




What other dishes do you cook with Chanterelle mushrooms or other seasonal delicacies? Even if I’m just thinking about this super creamy Chanterelle Risotto.

For example, when Chanterelle mushrooms appear, I want to stock up on a few, as they are mushrooms that are only found in season. Therefore, to enjoy a whole week of these delicious mushrooms, I buy quantities for 3 dishes per week. I love to cook a scrambled egg with Chanterelle mushrooms, this creamy Chanterelle Risotto, and simply pan-fried Chanterelle mushrooms with garlic served with toast. Rainbow on the palate!!!

Out of mushroom season, I enjoy the most delicious creamy mushroom soup. Mushrooms are very healthy and I enjoy adding them to my diet constantly. You can replace the Chanterelle mushrooms in this delicious and creamy risotto with any type of mushroom. But try to enjoy the seasonal dishes with your loved ones. You will see how enthusiastically you look forward to the next season and how nostalgically you think about the season that just passed.

Although the pumpkin season is short and that makes me very sad, at the same time I am happy that slowly, slowly, the pumpkin for cooking pies are starting to appear.
