Broccoli cream soup with goat cheese

Broccoli cream soup with goat cheese is a dish that helps me eat more broccoli. The taste of the soup is wonderful. I don’t think there is another recipe with broccoli that is as good. Goat cheese, garlic, and spices match perfectly to give this dish a unique flavor. It is a delicious cream soup with a strong taste, super simple to prepare and very healthy.
I used to buy broccoli all the time, hoping to find a delicious recipe that would help me eat this vegetable. Every time I looked at it in the fridge and always thought there was no way I could enjoy it. But look, it’s prime time has come and every time I go shopping and buy broccoli, this creamy soup is the first dish that I will cook as soon as I get home.

Broccoli cream soup with goat cheese


800 g broccoli
100 g goat cheese
2 potatoes
1 onion
3 garlic cloves
200 ml cooking cream
30 g butter
50 ml olive oil
1/2 teaspoon of black pepper
1/2 teaspoon of thyme
1/2 teaspoon of oregano


  1. In a large pot saute the finely chopped onion on medium heat for 5 minutes.
  2. Meanwhile, peel and cut the potatoes into small cubes so that they would boil as quickly as possible.
  3. Add the butter and potatoes over the sauteed onions and put enough water in the pot to cover them. Cook them on high heat for 20 minutes. Cover the pot with a lid so it would boil faster.
  4. Wash the broccoli well and cut it into small pieces.
  5. Put water to boil in a large pot. When the water started to boil, add the broccoli and let it boil for a maximum of 15 minutes.
  6. Then put the broccoli into the blender along with the onions and the boiled potatoes. Add the shredded cheese, the cooking cream, the pressed or finely chopped garlic, the spices, and two tablespoons of water from the water in which the broccoli was boiled.
  7. Blend the composition until it became homogeneous. Depending on your preferences, you can adjust the consistency of the soup by adding a ladleful of boiled water, from the water in which the broccoli was boiled.

You know those stories you come across with most traditional recipes like when I was little, my grandmother used to make this recipe for me blah blah… I wish I could tell this story about this delicious broccoli cream soup with goat cheese. What I mean is that I wish I grew up with this soup full of vitamins and minerals, very useful for the body. Unfortunately, broccoli has been introduced into my diet very little or not at all.

Luckily, I discovered this recipe goodness that makes me enjoy this superfood – broccoli. Even though I discovered it very late, around 27 years old, the important thing is that I insisted on finding it ♥ and that I can share it with you.

I was curious to find out which country consumes the most broccoli. I did not find relevant data, but I found something interesting, namely that broccoli has been cultivated in Italy since the time of the Romans. I tried to look for traditional broccoli recipes but I couldn’t find any. I’m wondering why. How could our grandmothers raise us with broccoli dishes if even today we don’t find much information?

I hope to become a grandmother who will raise my grandchildren with broccoli cream soup with goat cheese… that is, if I don’t have some vegan grandchildren :)) who knows?

What is the easiest way to cook and eat broccoli?

The easiest is to steam broccoli. You don’t need some wonder pot or steamer. You just need a normal pot with a lid. All you have to do is put some water in the pot and cut the broccoli into small florets. When the water starts to boil, add the broccoli florets and cover the pot with a lid. Not all broccoli florets need to be submerged in water. The steam that forms in the pot will cook the broccoli most healthily. In a maximum of 15 minutes, the broccoli will be cooked and delicious.

To add extra flavor, you can add some pressed garlic and your favorite spices at the end. You can serve broccoli as is or add it to salads. You can also keep it in the fridge for the next day for breakfast or even for a healthy lunch.

Over time there have been many vegetables that I have detested. I regret having to use these words to describe how I felt about certain vegetables. But something interesting happened at one point. Day by day I became more and more curious, both to try new tastes and to experiment with recipes for dishes that I have never eaten before. And a vegetable or fruit that I wouldn’t have eaten in the past even if I got who knows what in return, well now it has become my favorite and I have no idea why. This category includes: broccoli, cauliflower (by the way, the vegan cauliflower recipe is sensational), peas, beetroot, capsicum and I think I can go on and on with this list.

We will never forget the recipes with which our parents and grandparents spoiled us, the taste of our childhood, and the taste we grew up with, but it is important to evolve. Let’s evolve on all levels, including culinary. Culinary evolution seems to me as important as developing the healthy habit of exercising daily or consuming the required amount of water per day.

And broccoli for me represents a vegetable of evolution.
