Avocado toast with smoked salmon and poached egg

Do you also want to prepare breakfast like top restaurants? Well, that’s what I wanted too, and I didn’t stop until I made this avocado toast with smoked salmon and poached egg. The variety of ingredients that I used gave a unique flavor to this dish.

Avocado toast with smoked salmon and poached egg


2 eggs
2 large slices of bread
a teaspoon of butter
cream cheese for spreading the two slices of bread
1 avocado
100 g smoked salmon (you can add the amount for your taste)
20 g mixed seeds or just pumpkin seeds
1 tablespoon of vinegar
1 medium tasty tomato or 6 cherry tomatoes
150 g mixed salad (I like valerian + baby spinach)
the juice of half a lemon
1 tablespoon olive oil
30 g grated parmesan or pecorino

Optional: a small spicy red pepper and a pinch of salt.

I started with what I found more difficult, namely to cook the eggs. If you are ok with this process, go straight to cooking method.

How do you make a poached egg for this delicious breakfast – avocado toast with smoked salmon and poached egg?

  • First of all, the egg must be very fresh. There are many methods of testing this. The method I use is to put the egg in a bowl of water and it must sit perfectly on the bottom of the bowl. If it rises to the surface it is very old and should not be eaten, if only one end of it rises it is ok to eat as soon as possible. But to prepare the poached egg it must be very fresh.
  • Okay…after you made sure of that, you cracked the egg and put it in a small bowl or cup to be ready to “throw” into the whirlpool. Therefore, put a liter of water in a pot and put it on medium heat. When the water starts to bubble at the bottom of the pot, add a tablespoon of vinegar to the water. Immediately with a spoon mix in the water to create a vortex, put the egg in that vortex, and immediately reduce the heat to a minimum.
  • In 3 and a half minutes, a maximum of 3 minutes and 50 seconds, the poached egg should be ready. It is taken with a slotted spoon and placed on a plate that has a paper napkin on it. The paper absorbs the extra liquid and the egg is only good to eat.

The vinegar is put in the water to avoid the egg scattering. The egg won’t taste like vinegar.
The water should not boil when you put the egg. Only a few air bubbles should form at the bottom of the pot.

Cooking Method

  1. After poaching the egg, put a pan on medium to high heat. Grease the bread slices with butter, only on one side, and fried them with the greased side on the hot pan. Turn on the heat slowly and left them for around 2-3 minutes. Keep checking to make sure they didn’t burn. You can fry them to taste. I didn’t fry them very badly. I like the taste of toasted bread better, but I preferred to keep the bread soft for this recipe.
  2. While the bread is toasting, cut the avocado in half lengthwise, remove the pit, and thinly slice each half.
  3. Spread the toasted bread slices with cream cheese and put half a sliced ​​avocado on each slice of bread.
  4. Divide the smoked salmon into two equal amounts and put them on top of the avocado.
  5. Put the poached eggs, one on each slice, on top of the salmon and grate parmesan over them.
  6. Wash the spinach and valerian well, put a spoonful of olive oil, the juice of half a lemon, and finely chopped tomatoes. Mix them well and this is the easy way to get a delicious and super simple salad.
  7. In the pan in which you toasted the bread, add the seeds, as they were not toasted and give to this dish an extra flavor. Fry them for 2 minutes on medium heat and mix them from time to time.
  8. On the plate, put the avocado toast with smoked salmon and poached egg and half of salad. On top of these, sprinkle the roasted seeds. I also chopped a small spicy pepper and put it on top of the salad.
