Avocado Egg Salad

How does avocado egg salad sound to you? To me, it sounded like something I would never eat. But I want to thank my thoughts :)) who decided to create a food recipe blog at some point. The advantage of a food blog is that whether you like it or not, you have to cook and try dishes that you have never eaten before. It is a true blessing for me to be able to enjoy and learn to prepare so many delicacies. Avocado salad with egg is on top of them. While I was making it, I kept thinking about what ingredients to add to get a taste that I could at least be ok with. And I decided to choose classic and simple. A recipe with few ingredients, quick to prepare, and perfect for a delicious and healthy breakfast.

This avocado egg salad taught me a lesson that I unfortunately still have quite often in the kitchen. Let’s put aside the preconceptions!!! While shooting an Instagram story with this salad, I tasted it. I hadn’t dared until then, because I had the impression that it wasn’t exactly to my taste. I filmed, tasted, put my phone away, and enjoyed the best avocado salad. I didn’t care about any story anymore 🙂 That’s exactly what this blog is about: the best taste created with ingredients that bring us extra vitality.

Avocado Egg Salad

Ingredients

2 avocados
3 eggs
the juice of half a small lemon
1 teaspoon mustard
1 red onion – medium
1 pepper (like banana pepper if you don`t like spicy)
1/2 teaspoon each of black pepper and oregano




Method

  1. In a kettle, boil the 3 eggs. For this recipe, the eggs must be boiled until the yolk becomes hard. Therefore, from the moment the water starts to boil, it is necessary to leave the eggs to boil for 8 minutes. Depending on the size of the eggs, if they are small, one minute is subtracted from the cooking time, if they are very large, one minute is added. If the eggs are overcooked, the yolk starts to turn green on the edge. It doesn’t mean that the eggs are no longer good, it just looks different.
  2. While the eggs are cooking, cut each avocado in half, remove the pit, and take the pulp from the skin. Cut the pulp into small cubes and add the lemon juice over it.
  3. Clean and finely chop the onion. Deseed the pepper and finely chop it as well.
  4. In a large bowl, mix avocados, red onion, pepper, mustard, and spices. Mix well so that all the ingredients blend harmoniously.
  5. After the eggs were cooked, put them in a bowl of cold water. To peel them evenly, crack the eggshell and then clean it under cold water. When water penetrates under the shell, it peels off evenly and easily.
  6. Peel the eggs and cut them into small cubes. I put them in the bowl, along with the rest of the ingredients, and mixed gently until uniform.

This is by far the best avocado egg salad I’ve ever eaten.

I love making and enjoying this avocado egg salad for breakfast the most. It is also a suitable recipe for lunch, but it must be prepared just before it is served. Although this recipe contains lemon juice, which slows the oxidation process of the avocado, the latter does not retain its green color for long. An avocado and egg salad prepared in the morning, unfortunately, cannot be served for lunch because although the ingredients are still fresh and can be enjoyed, the avocado oxidizes and turns brown. And visually this salad is no longer appetizing at all. Therefore, it should be enjoyed as soon as it is prepared. The best advantage is that it is prepared very quickly.

I also usually prepare some toast with which I enjoy this avocado salad. I think the taste is perfect. I also sometimes enjoy it with a warm pita… a treat. Another interesting variation is to serve this avocado egg salad on puffed rice rounds.

I usually enjoy this delicious salad with fresh orange or grapefruit juice. To prepare the fresh grapefruit juice, I add a grapefruit, 2 mandarins, and a spoonful of honey. Orange juice I make it only with oranges.




How do we choose avocados from the store?

When buying avocados, it is necessary to make sure that the stem is still on top. It’s very small, but it has to be there. If it has been removed there may be parts of the brown fruit inside. So, it is necessary to buy only avocados with the stem.

Also, if the avocado fruit has bumps or is soft in certain parts, you should not buy it. Most likely it was hit and in that area, it has already started to deteriorate.

If you choose to buy avocados that contain a label that shows that they are ripe (ready to eat), you should consume them within a maximum of two days.
